Return of Daydah

Hi everyone! I know its been ages since I updated this blog, and I apologize. I am back and better, with lots of tried and tested recipes to share!
First let me tell you what I made today.

I made pounded yam with my blender.

Yes, you read right. With my ordinary 350W Philips blender. Twice.
I experimented with the stump part of the yam tuber. Sent hubby the picture at work, and he ran home straight. So I had to make another batch for him.
It was absolutely heavenly - no difference in texture, smell, look, to the one made inside the mortar.

EDIKAIKONG SOUP

My friend, IjayBaby contributed this recipe for our use some time ago - pls try it out!

Ingredients:

1. Pumpkin leaves

2. Lean Meat

3. Dry Fish n Stockfish

4. Crayfish

5. Waterleaf

6. Okazi Leaves

7. Maggi, Salt

8. Fresh Pepper

9. Onion

10. Red Oil

11. Water


Procedure:

Step 1: Wash the Pumpkin Leaves and Water Leaves properly in salt water to remove dirts.
Step 2: Slice the Ugu and Water leaf
Step 3:  Season and Boil the meat,dry fish and stockfish with onion, salt and Maggi till tender
Step 4:  Add ur pounded fresh pepper,crayfish and stir.
Step 5: Add the sliced Water Leave and Pumpkin leaves and Stir.
Step 6: Add red Oil( 3 Cooking Spoon). 
Step 7:  Allow to boil for 3 mins.
Step 8: Slice the Onion and pound together with the sliced okazi leaves.
Step 9: Add to the already boiling soup.
Step 10: Add Salt, Maggi to taste.
Step 11: Allow to cook for like 1min
Step 12: Your soup is ready.

Note: You don't need to add too much water cos the leaves will bring out water when it boils.

Serve your edikaikong(Vegetable Soup) with Semovita, Pounded Yam, Fufu,or Eba.
The soup is high in all the necessary buiding blocks of good health.

Name: Yamarita


I am currently working on a project with a bank, and like all banks, they love to do things with style. We are given tea and coffee in the morning, then our orders are collected for lunch. It was after the second day that I discovered Yamarita.



Yamarita is a variation of yam that is very simple to prepare, and can be eaten with any sauce. Here is a quick recipe that I was able to procure from a chef:

Ingredients:
African Yam - 0.5kg (for a serving of 3 adults)
Palm oil - about 2ml, which is one tablespoonful
Salt to taste
Three medium sized eggs
Chopped onions
Fresh, tomatoes, chopped.
Fresh pepper, chopped.
tomato puree, small quantity.

Procedure:
Step 1: Peel the yam tuber. Cut it up into giant chip sizes (like potato chips for a giant).

Step 2: Rinse the pieces twice and put in a pot. Pour water and boil until tender.

Step 3: When tender, drain in a cullender, and blot away any drops from the pieces.

Step 4: Get a bowl and break the eggs into it, and whip them up untl frothy.

Step 5: Add a bit of salt to the whipped egg, and place in a wider bowl. Now dip each chip of the yam in the egg mixture and roll it until it is covered completely by the egg mixture.

Step 6: Place a frying pan on low heat and add vegetable oil. Fry the yam chips, turning them when the egg is fried solid, and ensuring that it does not burn.

Step 7: Remove the fried yam pieces from the oil.

Step 8: Mix the tomato puree, chopped onions, chopped pepper, chopped tomatoes in a bowl.

Step 9: Use a spoon to gather any wayward bits of fried egg that might remain in the hot oil. Add the tomato mixture to the oil, and stir fry until tender.

Step 10: Add salt to taste. Add powder pepper to taste as well.

Serving: Place the fried yam chips in a platter. Place the tomato sauce in a bowl.

Eat!

Local food: Yam

Yam is a root tuber eaten in Africa and some parts of Asia. There are several types of Yam (Yellow yam, Water Yam, Small Yam etc) and each one is consumable.
There are various ways that this tuber can be eaten, pounded, boiled, roasted, Fried, Mashed, just name it. Every tribe in Nigeria has access to Yam and cooks it in various ways.
